Are you on the overnight Weetabix bandwagon yet? Itโs a great new twist on overnight oats and makes a delicious, filling, tasty breakfast.
Itโs really simple to make the night before and leave it in the fridge overnight, ready for when you need it in the morning.
I have created so many flavours of overnight oats now, and I am excited to share this new recipe with you.
WHAT COULD I USE INSTEAD OF WEETABIX?
This recipe also works really well with oats instead of Weetabix.
WHICH YOGHURT SHOULD I USE?
I like to use protein yoghurts as they are filling, and most are made with cream cheese, which helps achieve a more cheesecake-like consistency.
Aldi have a great range of low-fat protein yoghurts and puddings, as do Lidl. I also enjoy the Arla yoghurts or the Lindahls range.
WHAT COULD I USE INSTEAD OF WEETABIX?
This recipe also works really well with oats instead of Weetabix.

INGREDIENTS
- 1 Weetabix biscuit
- 30ml skimmed milk
- 1 low-fat vanilla protein yoghurt
- 50g blueberries
- Optional:ย 1 teaspoonย of honey to drizzle, and a tiny bit of crushed Weetabix
INSTRUCTIONS
Step 1: Prepare the Base
Place the Weetabix biscuit in a bowl or meal prep container, and crumble it thoroughly with your hands or the back of a spoon until it resembles coarse crumbs.
Step 2: Add the Milk
Pour the milk evenly over the crumbled Weetabix. Stir slightly, then press the mixture down firmly with the back of a spoon to create a compact, even base layer. Make sure itโs flattened well so it sets nicely in the fridge.
Step 3: Make the Blueberry Yogurt Layer
In a separate bowl, combine the blueberries with the protein yogurt. Gently mix until the blueberries are evenly distributed throughout the yogurt.
Spread this mixture evenly over the prepared Weetabix base, smoothing the top with a spoon.
Step 4: Add the Toppings
Drizzle honey lightly over the yogurt layer. Finish by sprinkling a small amount of crushed Weetabix on top for added texture and crunch.
Step 5: Chill Overnight
Cover the container and refrigerate overnight (or for at least 4 hours) to allow the layers to firm up and the flavors to blend.
Serve chilled and enjoy!


NOTES
You could swap protein yoghurt for fat-free vanilla Greek yoghurt, or even use Quark instead.
